Microgreens 101
The science and spirit behind these tiny powerhouses.
Why eat them?
Microgreens are harvested right after the 'cotyledon' leaves form. At this stage, the plant is using all its stored energy to burst into life.
Did you know?
A study by the University of Maryland discovered that microgreens can contain up to 40 times more nutrients than their mature counterparts (like full-grown spinach or broccoli).
Busting Common Myths
"Just a Garnish"
False. In India, we use them like 'Sabzi'. A bowl of Methi microgreens is a meal, not a decoration.
"Hard to Digest"
False. They are packed with enzymes that actually aid digestion, unlike some raw mature beans.
"Expensive"
False. You only need 50g to get the nutrition of 500g of mature veggies. Value for money is high.
